I don’t know if anyone els has this “problem” my zx2 seems to over cool the temp gauge only gets to the first white line after the blue cool line when driving in not so cool winter (anything below 60-50F) I’m not entirely sure what temp it is actually running and I’m not getting any codes and have replaced the thermostat so I’m just wondering if it’s the design of these cars are just really efficient at cooling or if I have a “problem” with the system

probably the sensor but could be a wiring issue as well
iirc think the lower sensor on the tstat housing is the one for the gauge on the dash, the other one is the one for the computer. we have two on the housing
if you can scan the ECU and its reporting a valid temp then the car isnt actually overcooling, its just the gauge or sensor or wiring. if the needle on the cluster moves at all try unplugging and see if it moves, if so id replace the sensor, its pretty common and sensors are pretty cheap
oh and if you have heat coming out of the heater then your not overcooling, its just the sensor
